Mocha Madness Cookies
One of my new faves!
Cookies: 1 stick butter, softened
Glaze: 1 t instant coffee
1) Preheat oven to 350 degrees. I put Reynolds Wrap no stick aluminum foil on the cookie sheets
2) Make cookies - beat butter and sugars in large bowl with electric mixer at med. speed until creamy. Add egg and vanilla, beat until blended, scraping down the side of the bowl once. Combine flower, sale and baking soda in a bowl. Gradually add flour mixture to butter mixture, beating until blended. Stir in chocolate.
3) Drop dough by tablespoons 3 inches apart onto cookie sheet. Bake 10-12 min. or until lightly browned. Cool 5 minutes on cookie sheet then remove to wire rack to cool completely.
4) For Glaze, mix coffee, and 2 T of half and half in microwavable bowl. Microwave on high for 15 seconds or until coffee dissolves. Stir in powdered sugar until smooth. Drizzle glaze over cookies, then let stand for 30 minutes until glaze is set.
Five Layer Dip
Great for football season!
1 can (16 oz) refried beans
This is a cool and refreshing summer soup to make in a hurry!
Blender Borsch
Blend covered for 2 minutes (and ingredients need to be added in this order)
Serve with a dollop of sour cream on top. I put this red soup in blue bowls, and top with white sour cream -- gives it a patriotic red, white, and blue look!
My family and I make this tart and tasty dish every Thanksgiving and Christmas -- it looks particularly lovely in a glass bowl. And it's easy - always a requirement (grin).
Cranberry Waldorf Salad
Night Before: In a food processor or chopper, grind 1 bag of fresh cranberries. Put in large bowl and add 1 cup of sugar and 2 cups of white mini-marshmallows. Place in fridge overnight.
Remove bowl from fridge. Add apples, grapes and nuts (you can add more or less to taste). Fold in 1 carton of Cool Whip and then transfer salad into serving bowl. Keep chilled until served.
Decadent Desserts
Okay, I confess I've been a chocoholic from an early age. Having a sweet tooth runs in my family. So what I mostly cook are desserts. I thought I'd post a few of my favorite recipes for you here -- all are easy to prepare or I couldn't make them (grin). Happy Eating!
Coffee Ice Cream Mud Pie
1 quart coffee ice cream, softened
Spread ice cream into crust, pour chocolate syrup on top and swirl with knife. Cover and freeze for at least 2 hours. Serve frozen.
One of my all-time fave fall recipes is this one for apple crisp -- it makes the whole house smell good and tastes delicious hot or cold the next day...in the off chance there are any leftovers...
Apple Crisp
4 cups sliced pared apples
Heat oven to 400. Grease a square 8x8 pan. Arrange apples on the bottom of the pan then sprinkle the water and sugar over. In a bowl mix together Bisquick, the 1/2 cup sugar, and cinnamon. In a cup, beat the egg with a fork, then slowly pour into the bowl, stirring constantly with a fork until the mixture is crumbly. Sprint mixture evenly over the apples, pour the melted butter over the top. Bake 25 minutes or until brown.
1/2 cup packed light brown sugar
1/4 cup sugar
1 egg
1 t. vanilla
1 cup flour
1/2 t salt
1/2 t baking soda
1 bar (3 oz) coffee flavored chocolate, finely chopped (I put mine in a small chopper food processor)
1 to 2 T half and half
1/2 cup powdered sugar
1 tablespoon taco seasoning mix (optional)
I cup sour cream (you can use low fat)
1 cup salsa (I use mild, but pick your own level of spiciness)
1 cup shredded lettuce
1 cup Mexican style shredded cheese
2 tablespoons pitted black olives or chopped olives (I use more, lots of olives, 1 or 2 of those little cans of chopped -- enough to almost make another layer, hey that would make this a six layer dip!
Mix the beans and the taco seasoning (I like mine mild, so I actually skip this step). Put into a glass casserole dish. Add remaining layers in order (sour cream, salsa, shredded lettuce, cheese, olives). Grab a bag of taco chips to dip and I hope your team wins!
1 cup chicken or veg. stock (I use Swanson canned)
1 cup beet liquor (from the can, whatever is there is fine, may be less than 1 cup)
2 tablespoons sour cream (can use low-fat)
2 teaspoons lemon juice
1/2 teaspoon salt
1 cup canned sliced beets (do not use picked beets!)
Ingredients
1 bag fresh cranberries
1 cup sugar
2 cups mini-marshmallows
2 apples cut up into bite-size pieces
3/4 cup of seedless green grapes cut in half
1/2 cup chopped walnuts
1 carton Cool Whip or Cool Whip lite

1 prepared chocolate cookie pie crust (like Oreo pie crust, 9 inches)
1/2 cup chocolate syrup
2 tbs. water
1/4 cup sugar
1 1/2 cups Bisquick
1/2 cup sugar
1/2 tsp. cinnamon
1 egg
1/2 cup butter or margarine, melted
